Two-Minute Cheddar and Apple on Raisin Walnut

Makes 1 sandwich
This might not even take two minutes to make. Dinah Koo, a great caterer in Toronto, passed this recipe on to us when we first opened ACE. My husband could eat it every day for lunch.

Ingredients
2 slices artisan-style Raisin Walnut bread
2 oz. (57 g) old cheddar, thinly sliced
¼ to ½ of a Granny Smith apple, thinly sliced



Instructions
Cover one slice of bread with the cheddar. Add the apple slices, and cover with the other slice of bread. Cut in half and eat.
COOK'S TIP
If making the sandwich ahead of time, keep the apple soaking in 1 cup (240 mL) of water and 2 tsp. (10 mL) of lemon juice to prevent browning. Drain, pat dry, and put in the sandwich at the last moment.
