In her first cookbook, Linda Haynes co-founder and co-owner of ACE bakery, shares her love of bread, bread making and all manner of dishes that go with bread. For centuries, people the world over have loved bread, and Canadians are no exception. Bread has been called 'The Staff of Life' and it's been said that 'a day without bread is long'. According to a recent survey conducted by ACE Bakery and The Strategic Council, a whopping 79% of Canadians eat bread every day and more than half of those choose to do so for convenience and health.

Starting with the Breads and Basics chapter, Linda unravels the secrets and joys of making a perfect loaf of focaccia, Calabrese, Irish soda bread, and much more. The more than 160 recipes that follow celebrate the versatility of bread with a mix of soups and salads, picnic fare, main dishes and desserts that range from casual to elegant.

Linda developed some of the recipes in the book for the café and fresh bread shop that has always been a part of ACE. Others were created for dinners with family and friends, while still others were inspired by her travels. Thirty-two colour photographs bring the recipes to life and more than 20 black and white photographs document a busy day in the life of ACE Bakery. Handwritten tips, trivia, proverbs, quotes and inspirations about bread are woven into the recipe pages. Linda's inventive recipes include Asparagus, Beet, and Chèvre Salad, Garlic and Black Pepper-Marinated Fillet of Beef on a Bed of Arugula, and Apple, Pear and Cranberry Charlotte with Crème Anglaise. All recipes have been carefully tested by critical home cooks and are sure to make each meal a joyous occasion.

Since it began 10 years ago, ACE Bakery has become renowned in Toronto. With hundreds of customers in hotels, restaurants, grocery and gourmet stores as well as several airlines, ACE Breads are enjoyed daily in Ontario, Quebec, Michigan and upstate New York. In keeping with ACE Bakery's philosophy of supporting the community that supports it, all of the author's royalties will be donated to food and nutrition programs to assist low-income families, finance culinary scholarships and support organic farming initiatives.
