Spicy Bird Burger

Make sure you've got a cold drink ready. Crispy onions, chipotle aioli and jalapenos give this bird a real bite.

4 ACE Bakery Classic Gourmet Burger Buns

Chicken Patty Ingredients

  • 20 oz. (560 g) ground chicken
  • 1 clove garlic, peeled and minced
  • PINCH chili flakes
  • 1 tsp. (5 mL) sea salt
  • ½ tsp. (2.5 mL) freshly ground black pepper

Topping Ingredients

  • 1 Tbsp. (15 mL) vegetable oil
  • 4 slices pepper jack cheese
  • 4 leaves romaine lettuce
  • 2 vine ripened tomatoes, sliced
  • ½ red onion, sliced into thin rings
  • 1 avocado, thinly sliced
  • ¼ cup (60 mL) crispy onions
  • ¼ cup (60 mL) chipotle or BBQ aioli
  • 1 fresh or pickled jalapeno, sliced

Instructions

  1. Place the chicken in a large bowl and mix together with the garlic, chili flakes, salt and pepper.

  2. Using wet hands, divide the mixture into 4 patties and press gently with your palm to form a burger that is about half an inch (1.27 cm) thick. Refrigerate for 30 minutes, on a covered tray, until ready to grill.

  3. Heat BBQ or grill pan to medium heat. When the grill is hot, brush the burgers with the vegetable oil and place on the grill. Cook for 5 minutes on one side until the bottoms begin to caramelize and gently char. Flip just once, resisting the urge to move them around or press down with the spatula. Cook for 4 or 5 minutes more on the other side or until no longer pink inside. Top the chicken burgers with slices of pepper jack cheese.

  4. Place the ACE Bakery Classic Gourmet Burger Buns cut sides down on the grill to lightly toast.

  5. Assemble the burgers by layering the bottom bun with romaine lettuce, slices of tomato and red onion. Top with chicken burger and layer with slices of avocado, crispy onions, a good slathering of chipotle aioli and as many jalapenos as you dare.
