Flour, Water, Salt, Yeast...we only use ingredients you can pronounce and can find in your home. No preservatives. No dough conditioners. No enzymes. That's all that goes into our remarkable bread.
At ACE®, we have a variety of starter doughs (or 'Mothers'). Mother doughs are living bacteria, which are left to rest at specific temperatures for specific lengths of time. By adding starters to a fresh dough yields a distinct flavor and texture. Our hard-working bakers work continuously to keep our starters alive. This means feeding the Mothers on weekends, holidays, even in blackout periods! But it's well worth it. Some of our starters are derived from Europe and are over 70 years old!
Stone deck baking provides even heat distribution, yielding a perfectly golden, crisp crust and uniform bake throughout.
